Hummus Wrap with Lemon

I love this wrap for lunch when I get home from a morning of surfing. It is so simple,  filling, and healthy!

I try to eat as little animal-based foods as possible, and legumes (beans such as chickpeas) are a perfect solution to getting protein without eating meat. Hummus is made from chickpeas and it gives you an easily-digested dose of protein, which is vital after every workout. (Chickpeas alone have 6 grams of protein per 1/2 cup, and women need 46 grams a day).

A squeeze of fresh lemon juice brightens this sandwich, and the veggies add a satisfying crunch. 

Hummus Wrap with Lemon 

  • Lavash bread (Trader Joes carries it). I use 3/4 of a piece of this flatbread.

*I’m not the bread police- You can use any kind of wrap or bread that you want. Try to avoid large tortillas, or large wraps marketed for sandwiches. Often times these have a lot of fat and can be upwards of 300 calories. SURPRISE!!

  • 1/2 cup hummus
  • 1/4 English cucumber, sliced thinly
  • 3/4 cup shredded carrot
  • 2 Tbs finely chopped red onion
  • Squeeze of fresh lemon juice
  • Sea Salt
  • Freshly ground pepper

Spread hummus on flatbread, and layer with veggies. Squeeze about 1 Tbs fresh lemon juice evenly on veggies, and sprinkle with sea salt and pepper.

Roll, cut in half and devour because your body needs that protein IMMEDIATELY!!
