Easy Buffalo Chicken Bites with Homemade Ranch

I could really care less about the Superbowl (baseball isn’t really my thing), but I do love the food that accompanies it! And no Superbowl party is complete without buffalo chicken! Making wings can be a pain, and I think that we can all agree that the best part is the flavor on the outside (not the fatty skin and the minimal amount of meat… GROSS). These flavorful little bites of buffalo heaven will satisfy your need for the Red Hot flavor, and are super easy to make!

 

Canned white meat chicken makes this recipe a snap to make, but feel free to use any chicken you may prefer! I use this recipe for homemade ranch on everything from pizza to salad, and I think you will find that once you make it that Hidden Valley will taste artificial and gross (because it is).

Easy Buffalo Chicken Bites

*Makes about 40 bites

  • 1, 12.5 oz  Canned Chicken, drained
  • 1/3 cup Franks Red Hot Buffalo Sauce (original)
  • 1 cup shredded Cheddar cheese
  • 1/3 cup Blue cheese (optional)
  • 2 dashes Worcestershire sauce
  • 1tsp garlic powder
  • 1 tsp onion powder
  • 1/4 tsp fresh ground pepper
  • 1/2 tsp sea salt
  • Scoop tortilla chips

*Preheat oven to 450

1.  In a large bowl combine the above ingredients (not the chips). Make sure to break up the chicken so there aren’t many chunks.

2. Spread chips (use the whole ones) on a baking sheet lined with foil, and put 1-2 tsp of the buffalo filling in each scoop.  (Weren’t those chips the best invention? We are talking MAXIMUM dippage).

3. Cook the Buffalo Bites for 9-10 mins, and serve hot topped with a little ranch! *Yummy recipe to follow

Homemade Ranch Dressing

  • 1.5  cups sour cream
  • 1 tbsp garlic powder
  • 1tbsp onion powder
  • 1 tbs dried parsely
  • 1 tsp dried dill
  • 1/2 tsp sea salt
  • 1/4  tsp fresh ground pepper
  • 3 Tbs half and half (or more if you like a thinner dressing)

1. Mix the sour cream with the spices using a spatula.

2. Add the half and half slowly until desired consistency. Refrigerate for 1 hour before serving to let the flavors meld into the yummiest Ranch dressing you will ever eat!
